ABOUT ITALIAN RIPASSO

This Ripasso is an excellent Italian red wine hailing from Puglia. It's crafted in a unique style where the pomace (the grape skins, seeds, and stems) left over from winemaking is fermented again with fresh wine. Ripasso wines are known for their depth, with flavors of dark cherry, plum, dried fruits like raisins and figs, and a hint of spice. They also tend to have a smoother, more rounded texture, making them a delightful choice for wine lovers.

HOW TO PAIR IT

The depth and richness of Ripasso make it a fantastic match for a variety of hearty foods.  Here are some great food pairings:

  1. Hearty Pasta Dishes: Pair Ripasso with pasta dishes that have rich meat sauces like Bolognese or ragu. The wine's depth complements the robust flavors.

  2. Grilled Meats: Ripasso shines alongside grilled meats such as steak, lamb chops, and pork. The wine’s slightly higher alcohol content and smooth texture enhance the savory flavors.

  3. A creamy mushroom or truffle risotto pairs beautifully with Ripasso, as the wine's earthiness complements the rich and creamy dish.

  4. Aged Cheeses: Strong, aged cheeses like Parmigiano Reggiano, Pecorino, and Gouda are great matches. The wine's depth balances the bold flavors of the cheese.

  5. Roasted Vegetables: Roasted root vegetables, like carrots, beets, and potatoes, bring out the wine's fruit and spice notes.
